Tuesday, July 7th (posted Saturday) House update! These are what the rooms look like now. Notice the fancy couch. I like my couch. I don't have new pictures of my bedroom because, well, it's my bedroom.

Friday, July 10th (also posted Saturday) So... manicotti. That delicious stuffed pasta that's open on both ends. Delicious to eat, but how hard is it to cook?

Well, that brings us to today. I haven't ever cooked stuffed pasta before, and so I felt somewhat intimidated. You have to cook the pasta twice, and how do you stuff those things anyways? But, the lure of delicious food won out again, & I decided to give it a shot.

Here's what I did: First, I cooked the pasta, just like any other pasta... in water on the stovetop. While it was cooking, I mixed together some filling & some sauce. I separated out some diced tomatoes to work as a topping & seasoned them with honey, olive oil, black pepper & oregano. I mixed the remaining diced tomatoes with some canned mushrooms, a bunch of seasoning (black pepper, oregano, lawry's seasoned salt, cajun flavor, & honey), and some cheese. Then when the pasta was done, I let it cool until I could hold it, and carefully spooned in the filling - it was a little messy, but that's okay. Then I put a little bit of the sauce in the bottom of my baking dish, put the manicotti in, and put the rest of the sauce on top. Then I baked it at 350 for 25 minutes. Then I ate it. And it was delicious. I think I may cook it again tomorrow (with some slight variations).

And now, I'm on my couch with my laptop & some coffee, a nice lamp pouring ambient low-wattage light over the room, and my cat napping on top of the couch. When it's all said & done, this day has been alright.
